Preparation of Ingredients

    Prepare the Chicken

    Pound the chicken breasts to an even thickness of about 1/2 inch. Season both sides with salt and black pepper.

    Assemble the Saltimbocca

    Lay two slices of prosciutto on each chicken breast, followed by sage leaves. Place a slice of fresh mozzarella and gouda cheese on top.

    Prepare the Vegetables

    Trim the ends of the broccolini and slice the bell peppers into strips.

Cooking

    Cook the Chicken

    In a large skillet over medium heat, add a drizzle of olive oil. Place the chicken breasts, prosciutto side down, into the skillet. Cook for about 4-5 minutes until the prosciutto is crisp. Flip the chicken and cook for another 4-5 minutes or until cooked through. Remove and keep warm.

    Prepare the Sauce

    In the same skillet, add minced garlic and sauté for 1 minute. Pour in the white wine and let it simmer for 2-3 minutes until reduced by half. Stir in the butter until melted, then add chopped parsley, salt, and pepper to taste.

    Cook the Vegetables

    In another pot, bring water to a boil and blanch the broccolini for 2-3 minutes. Remove and shock in ice water. In the same pot, sauté bell pepper strips until just tender.

    Serve

    Plate the chicken on a bed of mashed potatoes, drizzle with the wine butter sauce, and arrange the sautéed broccolini and bell peppers on the side.
