    Prepare the crust

    In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in melted butter and mix until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Bake the crust

    Preheat your oven to 350°F (175°C). Bake the crust for about 10 minutes or until lightly golden. Remove from the oven and let it cool while you prepare the filling.

Cheesecake Filling Preparation

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue to beat until the mixture is creamy.

    Add remaining ingredients

    Add the vanilla extract and sour cream to the cream cheese mixture. Mix until well combined. Add the eggs, one at a time, mixing on low speed after each addition until just incorporated.

    Pour filling into crust

    Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly wobbly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.

    Chill the cheesecake

    Remove the cheesecake from the oven and cool to room temperature. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Topping Preparation

    In a bowl, combine the fresh berries with granulated sugar and lemon juice. Toss gently and let sit for about 15 minutes to release the juices.

    Once the cheesecake is chilled, remove it from the springform pan. Top with the mixed berries just before serving. Slice and enjoy!
