Method

Burger Patty Preparation

  1. 1

    Prepare the Meat Mixture

In a large mixing bowl, combine the ground beef brisket and ground beef chuck. Add in the shredded cheddar cheese, salt, black pepper, and garlic powder. Mix gently using your hands until just combined. Be careful not to overwork the meat.

  2. 2

    Form the Patties

Divide the meat mixture into two equal portions and shape them into patties that are about 3/4 inch thick. Make a small indentation in the center of each patty to help them cook evenly.

Cooking the Patties

  1. 3

    Heat the Grill or Skillet

Preheat your grill or skillet over medium-high heat. If using a skillet, you can add a little oil to prevent sticking.

  2. 4

    Cook the Patties

Place the patties on the grill or skillet. Cook for about 4-5 minutes on one side until a nice crust forms. Flip and cook for another 4-5 minutes or until the internal temperature reaches 160°F (71°C).

Preparing LTOP

  1. 5

    Prepare the Vegetables

While the patties are cooking, prepare the LTOP toppings by shredding the romaine lettuce, slicing the tomato, and thinly slicing the red onion and pickles.

Making Poblano Slaw

  1. 6

    Combine Slaw Ingredients

In a large bowl, combine the diced poblano pepper, shredded cabbage, grated carrot, and mayonnaise. Add lime juice, salt, and black pepper. Mix well until everything is evenly coated.

Burger Assembly

  1. 7

    Assemble the Burger

Toast the burger buns lightly on the grill or in a toaster. Place a cooked patty on the bottom half of each bun, top with LTOP vegetables, and finish with a generous scoop of poblano slaw. Place the top half of the bun on and serve immediately.
