Mashed Potatoes

Brown Butter Wine Sauce

Method

Preparing the Ribeye

  1. 1

    Season the Steak

Generously season both sides of the ribeye steak with salt and black pepper.

  2. 2

    Charbroil the Steak

Preheat your grill or cast-iron skillet over high heat. Cook the ribeye for about 4-5 minutes on each side for medium-rare, adjusting the time according to your preferred doneness.

  3. 3

    Rest the Steak

Remove the steak from the heat and let it rest for at least 5 minutes before slicing.

Making Mashed Potatoes

  1. 4

    Boil the Potatoes

Peel and cut the russet potatoes into quarters. Place them in a large pot, cover with water, and add a teaspoon of salt. Bring to a boil and cook until tender, about 15-20 minutes.

  2. 5

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Adjust seasoning with salt to taste.

Preparing Broccolini

  1. 6

    Blanch the Broccolini

In a pot of boiling salted water, add the broccolini and cook for about 2-3 minutes until bright green. Drain and set aside.

Making the Brown Butter Wine Sauce

  1. 7

    Brown the Butter

In a saucepan, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma, about 5-7 minutes.

  2. 8

    Add Garlic and Wine

Add minced garlic and cook for 1 minute until fragrant. Then pour in the red wine and bring to a simmer. Cook until reduced by half, about 10 minutes.

  3. 9

    Finish the Sauce

Stir in fresh thyme, and season with salt and black pepper to taste. Remove from heat.
