Method
Preparing the Fish

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined. Set aside.

Prepare the Cod
Pat the cod fillets dry with paper towels. Season lightly with salt and pepper. Dip each fillet into the batter, ensuring each piece is well coated.
Frying the Fish

Heat the Oil
In a deep fryer or large pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cod
Carefully add the battered cod fillets to the hot oil, a few at a time, frying for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Repeat with remaining fillets.

Prepare the frozen waffle fries according to the package instructions. Once cooked, season with salt to taste.
Making Cajun Remoulade

Mix Ingredients
In a small bowl, combine the mayonnaise, Dijon mustard, Cajun seasoning, lemon juice, and minced garlic. Stir until well blended. Set aside in the refrigerator.
Making Dill Tartar Sauce

Combine Ingredients
In another small bowl, mix together the mayonnaise, chopped dill pickles, fresh dill, lemon juice, and salt to taste. Refrigerate until ready to serve.
Preparing Creamy Coleslaw

Mix the Slaw
In a large bowl, combine the shredded cabbage and carrot. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, and salt. Pour the dressing over the cabbage mixture and toss until well combined. Chill until serving.
