    Rinse the calamari and pat dry thoroughly with paper towels. Trim any connective tissue and cut into 1-inch rings and small tentacle pieces; pat dry again to remove excess moisture.

    Season the cleaned calamari lightly with a pinch of salt and black pepper.

    Make the dry coating: in a large bowl whisk together all-purpose flour, cornstarch, baking powder, paprika, garlic powder, salt, and black pepper until well combined.

    In a separate bowl whisk together the egg and ice-cold sparkling water to make a light batter.

    Heat vegetable oil in a deep, heavy-bottomed pot or fryer to 350-360°F (175-180°C).

    Dredge calamari in the dry coating, shaking off excess coating.

    Dip the coated calamari into the egg-batter, allowing any excess to drip back into the bowl.

    Return the battered calamari to the dry coating for a light second coat; shake off excess.

    Carefully fry the calamari in batches for 1.5–2 minutes per batch, until crisp and golden. Do not overcrowd the pan.

    Remove with a slotted spoon and drain on a wire rack or paper towels; immediately season with a touch of salt.
