Slice the rosemary focaccia loaf in half to create sandwich bases.

Lightly toast the cut sides on a skillet or grill pan until golden, about 1-2 minutes per side.

Spread basil pesto on the cut surfaces of the focaccia, about 2 tablespoons per sandwich.

Tear burrata cheese from its container and place on the bottom half; distribute the burrata (1 ball) evenly.

Tomatoes & Greens

Layer sliced tomato (1 large tomato) over the burrata.

Top with wild arugula (2 cups) for peppery greens.

Cucumber & Olive Salad

In a bowl, combine cucumber (0.5 cucumber, sliced), Kalamata olives (0.25 cup), olive oil (1 tablespoon), lemon juice (1 teaspoon), salt (0.5 teaspoon), and black pepper (0.25 teaspoon). Toss to coat. Let flavors meld briefly.

Finish & Serve

Close the sandwich with the top focaccia half and press gently to compact.

Slice into portions and serve with the cucumber & olive salad on the side.
