Preheat and prepare
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.

Trim and halve Brussels sprouts
Rinse 1 lb Brussels sprouts. Remove any yellow outer leaves, trim the stem ends, and cut each sprout in half.

Toss with oil and season
In a large bowl, toss the halved sprouts with 2 tbs olive oil, 0.5 tsp salt, and 0.25 tsp black pepper until evenly coated.

Roast until caramelized
Spread the coated sprouts on the prepared baking sheet in a single layer. Roast for 20–25 minutes, turning once halfway, until the edges are caramelized and centers are tender.

Add garlic mid-roast
During the last 5 minutes of roasting, sprinkle 2 minced garlic cloves over the sprouts to release aroma without burning.

Finish with lemon and honey
Remove the sheet from the oven. Drizzle with 1 tbs lemon juice and sprinkle 1 tsp lemon zest and 1 tsp honey. Toss gently to coat; return to the oven for 1–2 minutes if a glaze is desired.

Add crunch and cheese
Remove from oven. Sprinkle 0.25 cup toasted hazelnuts and 2 tbs grated Parmesan cheese over the sprouts. If desired, return to the oven for 1 minute to warm the cheese.

Season and serve
Taste and adjust salt and pepper as needed. Transfer to a serving dish and serve warm.
