Chill two champagne flutes in the freezer or by filling them with ice water for 5–10 minutes, then dry thoroughly.

Divide 120 ml peach purée (about 60 ml per flute) between the two chilled flutes.

Gently and slowly pour 120 ml Prosecco into each flute, filling to the top so that the peach purée stays layered at the bottom.

Serve immediately. If desired, garnish with a thin peach slice on the rim.
