    Rinse the pork spare ribs under cold water and pat dry. Remove the thin silverskin membrane from the bone side for better smoke penetration.

    In a medium bowl, whisk together the dry rub: brown sugar, paprika, chili powder, garlic powder, onion powder, salt, black pepper, and cayenne pepper until evenly mixed.

    Generously coat both sides of the ribs with the rub, massaging it into the meat so every surface is covered. Set the ribs on a rack and let rest at room temperature for 20-30 minutes (or refrigerate for up to 2 hours).

    Preheat your smoker to 225°F (107°C) or preheat your oven to 250°F (120°C) if you are not smoking.

    Place the ribs bone-side down on the smoker grate or a sheet pan if using an oven. Begin cooking for about 3 hours, maintaining the 225°F temperature. Every hour, spritz the ribs lightly with the apple cider vinegar to keep the surface moist.

    After about 3 hours, brush the ribs with a thin layer of BBQ sauce, then wrap them tightly in aluminum foil with a splash of apple cider vinegar. Return to the smoker or oven and cook for another 1 hour.

    Carefully remove the ribs from the foil, brush with another layer of BBQ sauce, and cook for an additional 15-30 minutes to set the glaze.

    Remove from heat, let rest 10-15 minutes, slice between the bones, and serve. This yields juicy ribs with a sticky, savory crust.
