Preparing the Crudo

Slice the Tuna
Using a sharp knife, slice the yellowfin tuna into thin sashimi-style pieces, about 1/4 inch thick. Arrange the slices on a chilled plate.

Sprinkle the sliced tuna with sea salt and drizzle olive oil over the top. Allow it to marinate briefly while you prepare the ponzu.

Sprinkle black sesame seeds over the tuna slices for added texture and flavor.
Making the Blood Orange Ponzu

Combine Ingredients
In a small mixing bowl, combine blood orange juice, soy sauce, rice vinegar, mirin, and dashi stock. Whisk together until well combined.

Taste and Adjust
Taste the ponzu sauce and adjust the seasoning as needed, adding more soy sauce for saltiness or more blood orange juice for sweetness.
Garnishing the Dish

Drizzle the blood orange ponzu over the tuna and avocado just before serving.
