Ice Cream Base

Method

Ice Cream Base Preparation

1

Mixing the Base

In a large mixing bowl, combine the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Whisk until the sugar dissolves completely.

2

Chilling the Base

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for the best flavor.

Flavor Variations

3

Adding Flavors

Once the base is chilled, divide it into portions depending on how many flavors you want to create. For each portion, fold in your chosen flavor additions, such as fresh fruit puree, cocoa powder, nut butter, mint leaves, or brewed coffee.

4

Churning the Ice Cream

Pour the flavored mixtures into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Sorbets Preparation

5

Creating the Sorbet Base

In a medium saucepan, combine the fresh fruit puree, water, granulated sugar, and lemon juice. Heat over medium heat, stirring until the sugar dissolves. Allow it to cool completely.

6

Churning the Sorbet

Pour the cooled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a smooth and creamy texture.

Gelato Preparation

7

Making the Gelato Base

In a saucepan, whisk together the milk and cornstarch. Heat over medium heat, stirring constantly until it thickens slightly. In a separate bowl, whisk the egg yolks and sugar until pale. Gradually mix in the warm milk mixture.

8

Finishing the Gelato

Return the mixture to the saucepan and heat until it reaches 170°F (77°C) while constantly stirring. Remove from heat, stir in vanilla extract, and cool. Freeze in an ice cream maker according to manufacturer's instructions.
