Smoked Black Cod

    Prepare the Black Cod

    Rinse the black cod fillets under cold water and pat them dry with paper towels.

    Season the Fillets

    Rub the fillets with olive oil, sea salt, and black pepper on both sides.

    Prepare the Smoker

    Soak the smoking chips in water for at least 30 minutes, then drain.

    Smoke the Cod

    Preheat your smoker to 225°F (107°C). Add the soaked chips to the smoker and place the seasoned cod fillets on the grill. Smoke for about 30-40 minutes or until the fish is cooked through and flakes easily with a fork.

    Cook the Base

    In a large pot, combine coconut milk and vegetable broth. Bring to a gentle simmer.

    Add Aromatics

    Smash the lemongrass stalks slightly to release their flavor and add them to the pot along with sliced galangal and kaffir lime leaves. Let simmer for 10 minutes.

    Add Mushrooms

    Add the sliced mushrooms to the soup and continue to simmer for an additional 5 minutes.

    Season the Soup

    Stir in lime juice and fish sauce, adjusting seasoning to taste. Remove from heat.

    Mix the Sauce

    In a small bowl, combine chopped cilantro, lime juice, fish sauce, and sugar. Stir well until the sugar dissolves.

    Julienne the carrots and chop the bok choy. Set them aside for serving.
