    Prepare the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks, lemon juice, and salt. Place the bowl over a simmering pot of water (double boiler) and whisk continuously until the mixture thickens. Slowly drizzle in melted butter while whisking until fully incorporated and smooth. Season with black pepper and set aside.

    Poach the Eggs

    Bring a pot of water to a gentle simmer, add a splash of vinegar. Crack the eggs into separate bowls and gently slide them into the water. Poach for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.

    Prepare the English Muffins

    Split the English muffins in half and toast them until golden brown. Place a slice of ham and a slice of Swiss cheese on each half.

    Assemble the Eggs Benedict

    On each toasted muffin half, layer the ham and cheese, then place a poached egg on top. Drizzle generously with hollandaise sauce.
