Chowder Preparation

    Cook the Vegetables

    In a large pot, melt 2 tablespoons of butter over medium heat. Add the onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Add the Potatoes and Stock

    Add the diced potatoes to the pot, followed by the fish stock. Bring to a boil, then reduce heat and simmer for 15 minutes until the potatoes are tender.

    Add the Seafood

    Stir in the salmon, scallops, haddock, and mackerel. Add the salt, pepper, thyme, and bay leaf. Simmer for an additional 10 minutes, or until the seafood is cooked through.

    Finish with Cream

    Remove the bay leaf and stir in the heavy cream. Allow to heat through, then adjust seasoning if necessary.

Garlic Toast Preparation

    Prepare the Garlic Butter

    In a small bowl, mix the softened butter and minced garlic together.

    Toast the Baguette

    Spread the garlic butter mixture on the baguette slices. Place under the broiler for 2-3 minutes or until golden and crispy.
