Pork Tenderloin

Blueberry Bourbon BBQ Sauce

Method

Pork Tenderloin Preparation

  1. 1

    Season the Pork

In a small bowl, mix salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Rub the spice mixture all over the pork tenderloin.

  2. 2

    Grill the Pork

Preheat the grill to medium-high heat. Grill the pork tenderloin for about 20-25 minutes, turning occasionally, until it reaches an internal temperature of 145°F (63°C). Let it rest for 5 minutes before slicing.

Blueberry Bourbon BBQ Sauce

  1. 3

    Prepare the Sauce

In a saucepan over medium heat, combine fresh blueberries, ketchup, brown sugar, apple cider vinegar, bourbon, Worcestershire sauce, minced garlic, salt, and black pepper. Bring to a simmer and cook for about 15-20 minutes, stirring occasionally until the sauce thickens. Use an immersion blender to puree the sauce if desired.

Potato Wedges and Seasonal Veggies

  1. 4

    Prepare the Potato Wedges

Preheat the oven to 425°F (220°C). Toss the potato wedges with olive oil, salt, and black pepper. Spread them out on a baking sheet and bake for 25-30 minutes or until golden and crispy.

  2. 5

    Cook the Seasonal Veggies

In a separate pan, sauté the seasonal vegetables in a bit of olive oil over medium heat until tender, about 5-7 minutes.
