Preparation of Chicken

Prepare the Chicken
Preheat your oven to 375°F (190°C). Rub the whole chicken with olive oil, and season with garlic powder, onion powder, paprika, salt, and black pepper. Place fresh rosemary inside the cavity.

Roast the Chicken
Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 hours or until the internal temperature reaches 165°F (75°C).
Cooking Vegetables

Prepare the Vegetables
While the chicken is roasting, chop the carrots, broccoli, and bell peppers. You can steam or roast them in the oven until tender.
Making Fries or Sweet Potato Mash

Cook the Fries or Mash
If using French fries, prepare according to package instructions (bake or fry). For sweet potato mash, peel and chop sweet potatoes, boil until tender, then mash with butter and salt.
Serving

Plate the Dish
Once the chicken is done, let it rest for 10 minutes, then carve and serve with the cooked vegetables and your choice of French fries or sweet potato mash.
