    Soften the cream cheese: remove 16 oz cream cheese from the refrigerator and leave at room temperature for 30 minutes or microwave in 15-second bursts until soft but not melted (about 25–35 seconds total depending on microwave).

    In a medium mixing bowl, beat the softened cream cheese with 1 cup sour cream and 1/2 cup mayonnaise until smooth and creamy using a hand mixer or sturdy whisk (about 1–2 minutes).

    Add 3 tablespoons honey, 1 tablespoon lime juice, 1 teaspoon soy sauce, 1 1/2 teaspoons curry powder, 1/2 teaspoon ground ginger, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Whisk thoroughly until combined and taste; adjust honey or salt if needed.

    Cover and refrigerate the base while preparing the crawfish mixture to allow flavors to meld (at least 20 minutes).

Crawfish & Aromatics

    Prep aromatics: thinly slice 4 green onions, mince 1 medium shallot, and pat dry 12 oz cooked crawfish tails if they are wet from packing liquid.

    Heat a skillet over medium heat and add 1 tablespoon unsalted butter and 1 teaspoon vegetable oil (oil raises the smoke point so butter doesn’t burn). When butter foams, add the minced shallot and cook until translucent, about 1–2 minutes.

    Add the crawfish tails to the skillet and sauté briefly, 2–3 minutes, just to warm and develop a little color; do not overcook. Stir in 1/2 teaspoon soy sauce and 1/2 teaspoon hot sauce if using, which seasons the crawfish subtly.

    Stir in half of the sliced green onions (reserve the rest for garnish) and cook for 20–30 seconds more. Remove from heat and let cool slightly (about 5 minutes).

    Fold the cooked crawfish and aromatics gently into the chilled cream cheese base until evenly distributed. Transfer the mixture to an oven-safe shallow baking dish (about 9-inch or similar). Smooth the top.

Topping, Bake & Finish

    Preheat the oven to 375°F (190°C).

    In a small bowl, combine 1/2 cup panko breadcrumbs, 1 tablespoon melted butter, and 1 teaspoon toasted sesame seeds if using. Stir until breadcrumbs are evenly moistened.

    Sprinkle the panko mixture evenly over the top of the dip. This will create a crunchy, golden topping reminiscent of fried wonton texture.

    Bake the dip in the preheated oven until bubbly around the edges and the top is golden, about 18–22 minutes. If the top browns too quickly, tent loosely with foil for the last 5 minutes.

    Remove from oven and let rest for 5 minutes. Sprinkle the reserved sliced green onions and chopped fresh cilantro (optional) over the top. Serve warm with 4 cups fried wonton strips or tortilla chips and pickled ginger on the side.
