Burger Patties

    Mix and form patties

    Place the ground beef in a large bowl. Add Worcestershire sauce, kosher salt, black pepper, onion powder, and garlic powder. Gently combine with your hands or a fork until just mixed—do not overwork. Divide the meat into two equal portions (about 8 oz each) and form into slightly wider-than-bun patties about 3/4 to 1 inch thick. Make a shallow thumb indentation in the center of each patty to help them cook flat.

    Preheat and oil pan

    Heat a heavy skillet, cast-iron griddle, or grill over medium-high heat until very hot (about 5 minutes). Brush the cooking surface with the vegetable oil.

    Cook patties

    Place patties on the hot surface. Cook undisturbed for 3 to 4 minutes to form a brown crust. Flip once and cook another 3 to 4 minutes for medium (internal temp about 140–145°F / 60–63°C). If you prefer medium-well, cook an additional 1–2 minutes per side. During the last minute of cooking, place a slice of cheddar on each patty and cover the pan or tent with foil to melt the cheese.

    Rest patties

    Transfer cooked patties to a plate and let rest loosely tented for 3 minutes so juices redistribute.

Buns & Toppings

    Prepare veggies

    While patties cook, thinly slice the red onion and tomato if not already done. Wash and dry the lettuce leaves. Have pickle slices ready.

    Toast buns

    Spread softened butter on the cut sides of the brioche buns. After removing the patties from the pan (while pan is still hot), place buns cut-side down on the skillet for 30–45 seconds until golden and slightly crisp. Remove from heat.

    Assemble sauce

    Mix mayonnaise, yellow mustard, and ketchup in a small bowl until smooth. Adjust to taste.

    Build the burger

    Spread about 1 tablespoon of the prepared sauce on the bottom bun. Place a lettuce leaf, then the rested cheeseburger patty. Top with tomato slice, several pickle slices, and a few rings of red onion. Spread a little extra sauce on the top bun if desired, then close burger.

    Serve

    Serve immediately with fries, chips, or a side salad. Provide extra ketchup and pickles on the side if desired.
