Oil and season
Rub each potato all over with 2 tablespoons olive oil. Sprinkle evenly with 1 tablespoon coarse salt and 1 teaspoon freshly ground black pepper, rubbing the seasoning into the skin.

Bake
Place potatoes directly on the oven rack (use a baking sheet on the rack below to catch any drips) and bake for 50–65 minutes, until skins are crisp and a skewer or fork slides into the center easily. Exact time depends on potato size.

Cook bacon
While potatoes bake, cook 8 slices of bacon until crisp. You can cook in a skillet over medium heat for 8–10 minutes, turning once, or lay on a foil-lined baking sheet and bake at 400°F (200°C) for 12–18 minutes. Drain on paper towels, then chop into small pieces.

Prepare scallions and chives
Thinly slice 4 green onions and finely snip 2 tablespoons chives. Set aside for garnish.

Optional sauce
If using, mix 1/4 cup buttermilk ranch dressing with 1 teaspoon hot sauce (optional) in a small bowl for drizzling.

Warm butter and prepare sour cream
Soften 4 tablespoons unsalted butter at room temperature or gently melt until spreadable. In a medium bowl combine 1 cup sour cream, 4 tablespoons milk (or half-and-half) and 1 teaspoon salt; whisk until smooth and slightly loosened. Reserve a few tablespoons of sour cream mixture for topping if you like a cold contrast.

Assemble inside potatoes
When potatoes are done, remove from oven and let sit 5 minutes. Using a sharp knife, make a lengthwise slit across the top of each potato and gently squeeze the ends to open. Fluff the interior with a fork to create space for fillings. Add 1 tablespoon butter into each potato and spoon in about 1/4 cup of the sour cream mixture into each. Stir lightly in the potato flesh to combine and make creamy.

Top with cheese and melt
Divide 1 1/2 cups shredded sharp cheddar across the 4 potatoes (about 6 tablespoons / 2 ounces per potato) and sprinkle 1 tablespoon grated parmesan over all if using. Return potatoes to the oven (broiler or 425°F) for 2–4 minutes until cheese is melted and bubbly. Watch closely under the broiler to avoid burning.

Add bacon and garnishes
Remove potatoes from oven. Sprinkle chopped bacon evenly over each potato, then add sliced green onions and snipped chives. Season with additional black pepper to taste.
