Sweat aromatics
In a small saucepan over medium heat, melt 1 tablespoon butter. Add the diced onion, carrot, and celery and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant.
- 3
Make a light roux
Sprinkle 1 tablespoon flour over the softened vegetables and stir to coat. Cook, stirring constantly, for 1 minute to remove the raw flour taste.
- 4
Add liquids and season
Gradually whisk in 1 cup broth until smooth, then add 1/2 cup milk. Add 1/4 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Bring the mixture to a gentle simmer over medium-low heat, stirring occasionally, and cook 3–4 minutes until slightly thickened.
- 5
Adjust texture
If you prefer a smoother, creamier soup for a single cup, use an immersion blender to briefly puree the soup in the saucepan until you reach the desired consistency (about 10–20 seconds). Alternatively, leave it chunky.
Add-ins / Garnish

Warm add-ins
If using optional cooked chicken, diced potato, or frozen peas/corn, add up to 1/4 cup of these to the simmering soup and heat through for 1–2 minutes so they warm and integrate into the cup-sized portion.
- 7
Taste and finish
Taste the soup and adjust seasoning with an extra pinch of salt or pepper if needed. If the soup is too thick for a cup, add up to 2 tablespoons extra broth or milk and stir until you reach a comfortable sipping consistency.
- 8
Serve
Pour the hot soup into a mug or soup cup. Garnish with 1 teaspoon chopped fresh parsley and a pinch of cracked black pepper. Serve immediately.
