    Prepare cabbages and carrots

    Remove any tough outer leaves from the green and red cabbages. Quarter each head, remove the core, and thinly slice the quarters into fine shreds using a sharp knife, mandoline, or food processor with a shredding disc. Measure out 6 cups green cabbage and 2 cups red cabbage once shredded.

    Shred carrots

    Peel the carrots and shred them on the large holes of a box grater or with the food processor until you have 2 cups packed shredded carrots.

    Slice onion and chop parsley

    Trim and halve the red onion, then slice very thinly. Measure 1/4 cup thin slices. Finely chop the parsley leaves to yield about 2 tablespoons.

    Combine vegetables

    Place the shredded green cabbage, red cabbage, carrots, sliced red onion, and chopped parsley in a large mixing bowl. Toss lightly to combine and distribute ingredients evenly.

Dressing

    Mix base

    In a medium bowl, whisk together 3/4 cup mayonnaise and 1/4 cup plain Greek yogurt until smooth and homogeneous.

    Add flavorings

    Whisk in 2 teaspoons apple cider vinegar, 1 teaspoon Dijon mustard, 1 teaspoon honey, 1 teaspoon granulated sugar, and 1/2 teaspoon celery seed until the sugar has dissolved and the dressing is glossy.

    Season dressing

    Stir in 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Taste and adjust acidity with up to 1 teaspoon lemon juice if you prefer a brighter tang. Adjust salt and pepper to taste.

    Combine slaw and dressing

    Pour the dressing over the prepared slaw vegetables. Using two large spoons, toss thoroughly until all vegetables are evenly coated with dressing. Continue tossing for about 1–2 minutes to ensure even distribution.

    Rest and marinate

    Cover the bowl and refrigerate for at least 30 minutes (preferably 1 hour) to allow flavors to meld and for the cabbage to soften slightly. If serving immediately, rest for 10–15 minutes; for best texture and flavor, chill 2–4 hours.

    Final toss and adjust

    Before serving, give the slaw a final toss. Taste and adjust seasoning with additional salt, pepper, or a splash of apple cider vinegar or lemon juice if needed. Serve chilled or at cool room temperature.
