Prepare the Tartar Sauce
In a bowl, combine the mayonnaise, chopped pickles, lemon juice, and capers. Mix well and refrigerate until ready to serve.

Prepare the Fries
Peel and cut the potatoes into thick strips. Rinse them in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Gradually add the cold sparkling water until you achieve a smooth batter.

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry until golden brown and cooked through, about 4-6 minutes per side. Remove and drain on paper towels.

Serve the battered fish alongside the crispy fries. Drizzle with tartar sauce and garnish with chopped parsley.
