Prepare the Marinade
In a mixing bowl, whisk together olive oil, soy sauce, minced garlic, honey, Dijon mustard, black pepper, salt, and fresh rosemary until well combined.

Marinate the Pork Chops
Place the pork chops in a resealable plastic bag or a shallow dish and pour the marinade over the chops, ensuring they are evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.

Grill the Pork Chops
Remove the pork chops from the marinade and discard the marinade. Place the chops on the grill and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

Rest and Serve
Once cooked, remove the pork chops from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute. Serve hot.
