Prepare the Filling

Cook the Aromatics

In a medium skillet over medium heat, add a splash of cooking oil. Once hot, add the finely chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Combine the Filling Ingredients

Add the shredded chicken or beef to the skillet along with the cumin powder, chili powder, salt, and black pepper. Stir well to combine all ingredients and heat through, about 2-3 minutes.

Add Cheese

Remove the skillet from heat and stir in the shredded cheddar cheese until melted and well incorporated into the filling.

Assemble the Taquitos

Warm the Tortillas

In a separate skillet or griddle, warm the corn tortillas over medium heat until pliable, about 30 seconds on each side.

Fill the Tortillas

Take a warmed tortilla and place 2-3 tablespoons of the filling in the center. Roll the tortilla tightly around the filling, ensuring the ends are tucked in.

Repeat

Repeat the process for the remaining tortillas and filling.

Fry the Taquitos

Heat the Oil

In a large skillet, heat the cooking oil over medium-high heat. The oil should be hot but not smoking.

Fry the Taquitos

Carefully place the rolled taquitos seam side down into the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side.

Drain and Serve

Once fried, remove the taquitos from the oil and drain on paper towels. Serve hot with sour cream and salsa on the side.
