Taquitos (filling & tortillas)

Prepare filling
Season the cooked shredded chicken or shredded Ensenada beef with 1 tsp salt and 1/2 tsp black pepper. If using chicken that is plain, warm it gently in a skillet with 1 tablespoon oil over medium heat for 3–4 minutes to combine flavors; for Ensenada beef use as-is or warm similarly.

Soften tortillas
Warm a stack of corn tortillas to make them pliable: wrap 8–12 tortillas in a damp kitchen towel and microwave 30–45 seconds, or heat each tortilla 15–20 seconds per side in a dry skillet until flexible. Keep warm under a towel to prevent drying.

Assemble taquitos
Lay a warm tortilla flat, place about 2 tablespoons (roughly 1/6 cup) of the shredded meat in a line down the center, then roll tightly from one edge to the other. Secure seam-side down on a tray. Repeat until all tortillas are filled (yields ~12 taquitos).

Fry taquitos (traditional)
Pour about 1/2–1 cup vegetable oil into a large skillet to reach 1/4-inch depth and heat over medium-high to 350°F (175°C). Fry 3–4 taquitos at a time seam-side down for 1.5–2 minutes per side, turning to crisp all sides, until golden and crisp. Transfer to a paper towel-lined rack to drain. Alternatively, for a lighter version: preheat oven to 425°F (220°C), place taquitos seam-side down on a baking sheet lined with parchment, lightly brush or spray with oil, and bake 10–12 minutes turning once until crisp and golden.

Prepare cabbage: finely shred green cabbage and place in a small bowl. Season lightly with a pinch of salt (about 1/8 tsp) and toss. This will provide a crunchy contrast to the crispy taquitos.

Sour cream & queso fresco: place sour cream in a small bowl for dolloping and crumble the queso fresco into a separate bowl for sprinkling over finished taquitos.

Pico de gallo: use 1 cup of prepared pico de gallo (or make fresh by combining diced tomatoes, onion, cilantro, jalapeño, lime juice and salt). Keep at room temperature until serving.
Tomatillo salsa (salsa verde)

Blend salsa: in a blender or food processor combine the roasted tomatillos, roasted jalapeño (remove seeds for milder salsa if desired), 1/4 cup chopped white onion, 1 garlic clove, 1/4 cup cilantro, 2 tablespoons lime juice, 2 tablespoons water and 3/4 teaspoon salt. Pulse/blend to a slightly chunky to smooth consistency according to preference. Taste and adjust salt or lime.

Chill or serve: refrigerate for 15–20 minutes to let flavors meld, or serve immediately at room temperature.

Plate the taquitos: arrange 3–4 taquitos per person on a platter. Top each taquito with a small handful (about 2 tablespoons) of shredded cabbage, a dollop (about 1 tablespoon) of sour cream, a spoonful (about 1 tablespoon) of pico de gallo, and a sprinkle (about 1 tablespoon) of crumbled queso fresco.

Finish with salsa & lime: spoon tomatillo salsa alongside or lightly drizzle over taquitos, and serve with lime wedges for squeezing.

Serve immediately so taquitos remain crisp. Leftover components store separately: taquitos in refrigerator up to 2 days (re-crisp in oven at 400°F for 6–8 minutes), salsa and pico 3–4 days.
