Prepare Cheeses & Meats

Bring to proper temperature
Remove all cheeses from refrigeration 30–45 minutes before serving so they come to room temperature and develop full flavor.

Slice the aged cheddar into 1/4-inch thick slices or bite-sized chunks. Place the wedge with the rind intact for presentation.

For the brie or camembert, keep the wheel whole. If desired, score a shallow cross on top to make portioning easier. Leave goat cheese whole or form into small quenelles using a spoon for easy serving.

Arrange prosciutto slices in gentle folds or rosettes. Fan out soppressata/salami slices. Stack capicola or smoked ham in small piles so guests can pick easily.
Prep Fruits, Nuts & Condiments

Rinse grapes and pat dry; keep them on the stem if possible to preserve appearance. Portion into small clusters or single stems for placement on the board.

Core and thinly slice pear or apple immediately before serving to avoid excessive browning. If you prefer, toss slices lightly in lemon juice (about 1 tsp lemon juice) to slow oxidation.

Choose a shallow wooden box, tray, or large board. Begin by placing cheeses first, spaced apart around the board to create anchor points.

Arrange cured meats in groups next to complementary cheeses. Use folds, rolls, and fans to create visual interest and make picking easy.

Fill empty spaces with clusters of grapes, fruit slices, dried apricots, nuts, and cornichons. Place larger items (toasted baguette slices, cracker stacks) at the edges so guests can take them without disturbing the arrangement.

Tuck rosemary or thyme sprigs between items as garnish. Lightly crack black pepper over the goat cheese or brie if desired.

Provide small cheese knives and spreaders: a soft cheese knife for brie, a spreading knife for goat cheese, and a hard cheese knife for cheddar. Include toothpicks or small forks for meats and pickles.
