Method
Sliced Fruit Selection
- 1
Prepare work area
Sanitize a cutting board, chef's knife, paring knife, and a large mixing bowl. Have your storage box or tray and paper towels ready.
- 2
Wash and dry
Rinse all whole fruits (grapes, apples, strawberries, kiwi, melon, pineapple, watermelon) under cold running water. Pat dry thoroughly with a clean towel or paper towels to remove surface moisture.
- 3
Hull and slice strawberries
Remove strawberry hulls with a paring knife. Slice larger strawberries in half or quarters so pieces are bite-sized (about 1/2 to 3/4 inch thick). Place into the large mixing bowl.
- 4
Prepare grapes
Remove grapes from stems and discard any bruised or damaged ones. Rinse again if needed and add to the mixing bowl.
- 5
Peel and slice melon
Cut the melon in half, scoop out seeds, then peel with a knife. Slice into 1/2-inch thick half-moon slices or cut into 1-inch cubes depending on desired presentation. Add to the bowl.
- 6
Core and slice apples
Core the apples and cut into thin wedges (about 1/4-inch thick). To prevent browning and add brightness, immediately toss the apple slices with 1 tablespoon of the fresh lemon juice in the bowl.
- 7
Peel and slice kiwi
Peel the kiwis with a paring knife or peeler, then slice into 1/4-inch rounds or half-moons. Add to the mixing bowl.
- 8
Core and slice pineapple
Trim top and base of pineapple, stand upright and slice off skin. Remove eyes with a small knife if needed, then core and cut into bite-sized wedges or chunks (about 1-inch pieces). Add to the bowl.
- 9
Slice watermelon or seasonal berry alternative
If using watermelon, cut into 1-inch cubes or small triangles. If substituting with other seasonal berries, size them to be bite-sized. Add to the bowl.

- 10
Combine and toss
Gently combine the prepared fruits in the mixing bowl to mix varieties without bruising. Taste a small piece and adjust sweetness: if fruits are not sweet enough, lightly toss with up to 2 tablespoons of light simple syrup.
- 11
Apply lemon to reduce browning
Sprinkle the remaining 1 tablespoon of fresh lemon juice over the combined fruit and gently toss. This helps preserve color on apples and prevents rapid oxidation.
- 12
Portion into box
Line your food-safe box or tray with a clean paper towel if desired to absorb excess moisture. Arrange fruit neatly in the box in sections or mixed, leaving a little space to avoid crushing. Use toothpicks or small dividers to separate delicate berries if needed.
- 13
Garnish
Tuck fresh mint leaves into corners or on top for aroma and visual appeal, if using.
- 14
Chill and store
Close the lid and refrigerate immediately. Keep chilled at 1–4°C (34–39°F). Consume within 48 hours for best freshness; apples may brown more over time even with lemon treatment.
- 15
Serve
Serve chilled. Provide small forks or picks if presenting for takeaway. If the box will be displayed for longer than an hour at room temperature, keep it in a cooler with ice packs to maintain food safety.
