    Temper cheeses

    Remove all cheeses from refrigeration 30–60 minutes before assembly so they come to near room temperature; this improves aroma and texture.

    Trim rinds only where necessary (remove loose paper rind from goat log if present). Leave attractive rinds intact (e.g., brie). Portion cheeses into attractive pieces: cut cheddar into 1/2-inch cubes or slices, slice brie wedge for easy serving, cut goat log into 1/3-inch medallions, and crumble a portion of blue cheese into a small pile.

Cured Meats & Accoutrements

    Fold prosciutto and soppressata slices into loose ribbons or rolls so they’re easy to pick up and look abundant. Place each type of meat in its own small cluster on the board/box.

    Spoon honey into a small jar or ramekin. Spoon fig jam/quince paste into a separate small jar. Place whole grain mustard in a third jar. Label or arrange them so they’re easy to access.

    Scatter Marcona almonds in a small pile; if desired, warm them for 3–4 minutes at 300°F (150°C) to bring out aroma, then cool before adding.

    Slice baguette thinly (about 1/4-inch) and toast at 375°F (190°C) for 6–8 minutes until lightly golden; cool. Arrange crackers and toasted baguette slices in small stacks or scattered fans so guests can easily select.

Assembly & Garnish

    If using a box or board, choose a focal point for the largest cheese (brie). Arrange the other cheeses radiating outward with space between for small piles of meats, fruits and nuts.

    Fill gaps with crackers, toasted baguette slices and dried fruit to create an abundant look. Place ramekins with honey, jam and mustard near cheeses that pair well: honey by blue cheese/brie, fig jam near aged cheddar, mustard near meats.
