Classic Guacamole

Classic Guacamole

    Prepare avocados

    Cut avocados in half, remove pits, and scoop flesh into a medium mixing bowl.

    Mash and season

    Using a fork or potato masher, mash the avocados to your desired texture (slightly chunky recommended). Add lime juice immediately and stir to combine to prevent browning.

    Add aromatics and tomato

    Fold in the finely diced red onion, minced jalapeño, chopped cilantro, and diced tomato. Mix until evenly distributed.

    Finish and taste

    Season with kosher salt and black pepper. Taste and adjust lime or salt as needed. Transfer to a serving bowl and keep covered with plastic wrap pressed directly on the surface if not serving right away to minimize oxidation. Garnish with extra lime wedges when serving.

Queso Bean Dip

    Sauté aromatics

    In a medium skillet over medium heat, warm the vegetable oil. Add the diced yellow onion and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the minced garlic and jarred green chiles and cook another 30 seconds until fragrant.

    Combine beans and spices

    Add the drained black and pinto beans to the skillet. Stir in ground cumin, smoked paprika, and kosher salt. Cook 2–3 minutes to warm through and let flavors meld.

    Blend for texture

    Transfer half of the bean mixture to a blender or use an immersion blender directly in the skillet. Add half of the half-and-half and blend briefly until slightly smooth but still retaining some texture. Return blended mixture to the skillet and stir to combine with remaining beans.

    Add cheeses

    Reduce heat to low and add softened cream cheese, shredded Monterey Jack, and sharp cheddar. Stir continuously until cheeses melt into a smooth, creamy dip. If mixture is too thick, stir in remaining half-and-half 1–2 tablespoons at a time to reach desired consistency.

    Finish and garnish

    Adjust seasoning with additional salt if needed. Remove from heat, spoon into a warm serving bowl, and garnish with chopped cilantro. Serve immediately with tortilla chips or warm tortillas.

Mango-Habanero Guacamole

    Prepare avocado and mango

    Halve and pit the avocados, scoop flesh into a bowl, and mash gently with a fork leaving some chunks. Fold in the diced mango so the fruit remains distinct and not pureed.

    Add flavor and balance heat

    Stir in the finely diced red onion, chopped cilantro, lime juice, and the very finely minced habanero. Start with a small amount of habanero and taste before adding more — habaneros are very hot. Add honey to balance heat and season with kosher salt and black pepper.

    Rest briefly and serve

    Let guacamole rest 5 minutes to allow flavors to meld. Taste and adjust lime, salt or honey. Serve in a chilled bowl alongside the Classic Guacamole and Queso Bean Dip.

To Serve

    Arrange the three dips on a large platter or three small bowls: Classic Guacamole, Queso Bean Dip (kept warm), and Mango-Habanero Guacamole. Surround with tortilla chips and crudités. Provide small spoons for each dip and lime wedges for extra brightness. Recommend serving immediately so guacamoles are fresh and queso stays warm.
