Dark Chocolate Ganache

    Prepare chocolate

    Place the 12 oz finely chopped dark chocolate in a medium heatproof bowl. If using an immersion blender later, leave chocolate in bowl; otherwise set aside. Chop very fine so it melts quickly and evenly.

    Heat cream

    In a small saucepan, combine 1 cup heavy cream and 1 tsp corn syrup (if using). Heat over medium until it just reaches a simmer and small bubbles appear at the edges — do not boil.

    Combine and emulsify

    Pour the hot cream over the chopped chocolate in three stages: pour about a third, wait 20–30 seconds to soften, then gently stir in concentric circles from center outward. Repeat with remaining cream until smooth and glossy. If needed, use an immersion blender for 10–15 seconds to fully emulsify and remove streaks. Add 2 tbs room-temperature butter and 1 pinch fine sea salt; stir until butter is melted and incorporated. If using optional flavors (zest, vanilla, or liqueur), add now and stir to combine.

    Chill ganache

    Cover the bowl with plastic wrap pressing lightly onto the surface to prevent skin forming. Refrigerate until ganache is firm enough to scoop — typically 1.5 to 2 hours depending on fridge temperature. For faster setting, spread in a shallow container to cool more quickly (about 45–60 minutes).

    Prepare coating stations

    Place cocoa powder, chopped toasted nuts, and any powders (espresso, raspberry) each in shallow bowls. Line a baking sheet with parchment or a silicone mat. Melt 8 oz dipping chocolate (if using) in a double boiler or in 20–30 second bursts in the microwave, stirring between bursts, until smooth and about 88–90°F for dark chocolate if you want a glossy snap (tempering). Alternatively, simply melt for dipping without tempering (chocolate will set but may bloom over time).

    Scoop or portion ganache

    Using a small cookie scoop (approximately 1/2 tablespoon to 1 tablespoon) or a teaspoon, scoop out portions of chilled ganache and quickly roll between your palms to form smooth rounds. If ganache is too soft, return to fridge for 10–15 minutes between batches. Aim for uniform size — recipe makes roughly 28–36 truffles depending on scoop size.

    Dust and roll

    Roll formed truffles in cocoa powder for a classic finish, or roll in chopped toasted nuts for a crunchy exterior. For powder coatings like espresso or raspberry, lightly dust and press so they adhere. Place finished truffles on prepared baking sheet.

    Dip in chocolate (optional)

    Using two forks or a dipping tool, submerge a truffle into the melted dipping chocolate, tap off excess, and place back on the lined tray. Immediately top with flaky sea salt, a sprinkle of chopped nuts, or a dusting of raspberry powder. If you tempered the chocolate correctly, allow dipped truffles to set at room temperature on a cool surface; otherwise, chill briefly (5–10 minutes) to set.

Finishing & Storage

    If any truffles are uneven, trim with a small knife once set and roll again if needed. For a decorative touch, pipe a thin contrasting chocolate drizzle over some truffles (melt 1–2 tbsp chocolate and drizzle with a spoon).

    Store truffles in an airtight container in a single layer or separated by parchment layers. Keep in the refrigerator for up to 2 weeks or at cool room temperature (below 68°F / 20°C) for up to 4 days. When serving, bring refrigerated truffles to room temperature for 15–30 minutes for best flavor and texture.
