Pat the wings very dry with paper towels. Removing surface moisture helps them crisp.

In a large bowl, combine baking powder, kosher salt, black pepper, and garlic powder.

Toss the wings in the baking powder-spice mixture until evenly coated. Arrange wings on a wire rack set over a rimmed baking sheet and refrigerate uncovered for 30–60 minutes (optional) to further dry the skin and improve crisping.

Oven Method (recommended for even cooking)
Preheat the oven to 425°F (220°C). Place the rack with wings on the baking sheet in the oven and bake for 25 minutes. After 25 minutes, flip each wing and bake another 12–15 minutes until skin is deep golden and juices run clear (internal temperature 165°F / 74°C). For extra crispiness, broil on high for 2–3 minutes, watching closely to avoid burning.

Alternative - Frying
Heat 2 inches of neutral oil in a deep pot to 350°F (175°C). Pat wings dry again, then fry in batches for 8–10 minutes until crispy and cooked through. Drain on paper towels.

Preheat air fryer to 400°F (200°C). Arrange wings in a single layer and air-fry for 22–25 minutes, shaking basket halfway, until crisp and cooked through.

While wings cook, make the glaze. In a small saucepan over medium heat, melt the butter.

Add hot sauce, honey, brown sugar, Sriracha (if using), apple cider vinegar, soy sauce, smoked paprika, cayenne, and minced garlic. Whisk to combine.

Transfer cooked wings to a large mixing bowl. Pour about three-quarters of the warm glaze over the wings.

Toss wings gently but thoroughly so each piece is evenly coated. Use a spoon to scrape glaze from the bottom to coat any neglected spots.
