Preheat and prepare
Preheat oven to 425°F (220°C) or preheat air fryer to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top; lightly oil the rack. Pat the wing bites very dry with paper towels — removing surface moisture helps them crisp.

Season and coat
In a large bowl combine kosher salt, black pepper, garlic powder, onion powder, smoked paprika and baking powder. Add the wing bites and toss until evenly coated. Drizzle 1 tablespoon vegetable oil over the wings and toss again so they are lightly glazed.

Cook the wings
If using the oven: arrange wings in a single layer on the wire rack and bake 35–40 minutes, flipping once halfway through, until skin is deeply golden and crisp and internal temperature reaches 165°F (74°C). If using an air fryer: working in a single layer (cook in batches if needed), air fry at 400°F (200°C) for 18–22 minutes, shaking the basket or flipping halfway, until golden and crisp.

Finish with oil
After cooking, transfer wings to a large clean bowl and immediately brush or drizzle with the remaining 1 tablespoon vegetable oil and toss gently to coat — this helps the sauce adhere and gives a glossy finish.

Make the sauce
While the wings cook, melt the butter in a small saucepan over medium-low heat. Add the brown sugar and stir until dissolved. Whisk in apple cider vinegar, honey, Worcestershire sauce, soy sauce, minced garlic and hot sauce (if using). Simmer gently 2–3 minutes until slightly thickened. Season with salt and black pepper to taste. Remove from heat.

Toss wings in sauce
Pour the warm sauce over the cooked wings in the large bowl. Toss thoroughly so each piece is evenly coated. Return coated wings to the baking sheet or an ovenproof dish and place under the oven broiler for 1–2 minutes if you want a slightly caramelized finish — watch carefully to avoid burning. (Skip broiler if using air fryer; you can briefly air-fry 1–2 minutes to set the glaze.)

Transfer sauced wing bites to a serving platter. Garnish with thinly sliced scallions and sesame seeds if using. Serve immediately with ranch or blue cheese dressing and lemon wedges on the side.
