Method
Salad base
Wash and dry the romaine or mixed greens thoroughly. Chop into bite-sized pieces and place in a large salad bowl.
Protein
Season protein
Pat the chicken/fish/tofu dry with paper towels. In a small bowl, mix 0.75 tsp kosher salt, 0.25 tsp black pepper, 0.5 tsp ground cumin and 0.5 tsp paprika. Rub the spice mix evenly over both sides of the protein.
Cook protein
Heat 1 tablespoon olive oil in a skillet over medium-high heat. For chicken: cook about 5–7 minutes per side (internal temp 165°F / 74°C) depending on thickness. For fish: cook 3–4 minutes per side until opaque and flakes easily. For firm tofu: sear 3–4 minutes per side until golden. Remove from pan and let rest 3–5 minutes, then slice or crumble into bite-sized pieces.
Pico de gallo
Combine the diced tomatoes, 1/4 cup finely diced onion, 1/2 jalapeño (or to taste), 2 tablespoons chopped cilantro, 1 tablespoon lime juice and 1/4 teaspoon salt in a small bowl. Taste and adjust lime or salt. Let rest 10–15 minutes so flavors meld.
Guajillo dressing
Toast the dried guajillo chilies briefly in a dry skillet over medium heat — 20–30 seconds per side — just until fragrant but not burned.
Place toasted chilies in a bowl and cover with hot (not boiling) water. Let rehydrate 10 minutes, then drain, reserving a tablespoon of soaking liquid.
In a blender or food processor, combine rehydrated guajillos, 1 garlic clove, 2 tablespoons cider vinegar, 3 tablespoons olive oil, 1 teaspoon honey, 1/4 teaspoon ground cumin, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper and 2–3 tablespoons warm water or reserved soaking liquid. Blend until completely smooth. If the dressing is too thick, add more water, one tablespoon at a time, until it reaches a pourable consistency. Taste and adjust salt, acid or sweetness as needed.
Toppings / finishes
Arrange the cooked protein over the dressed greens. Spoon pico de gallo over or beside the protein.
Drizzle crema over the salad in a thin stream or dollop on top. Sprinkle the grated queso evenly over the salad.
Scatter the tortilla strips over the salad for crunch. Serve with lime wedges on the side and additional dressing on the table.
