Make Simple Caramel Syrup

Combine 1 cup granulated sugar, 1/4 cup packed light brown sugar, and 1/2 cup water in a small saucepan over medium heat. Stir until sugar dissolves, then bring to a gentle simmer. Reduce heat and simmer 6–8 minutes until mixture thickens slightly and becomes syrupy. If using homemade caramel color, continue cooking a small separate 2 tablespoons sugar until amber and carefully deglaze with 1–2 tablespoons water, then whisk into the syrup; alternatively stir in 1 tablespoon store-bought caramel syrup. Remove from heat and cool slightly.

Prepare Acid & Citrus

While syrup is warm (not hot), whisk in 1 tablespoon fresh lime juice and 1/2 teaspoon citric acid solution (to make a 10% solution: dissolve 1/2 tsp citric acid in 1/4 tsp water — use measured 1/2 tsp of that solution; or substitute 1/2 tsp bottled lemon/lime juice). This balances sweetness and gives the bright tang characteristic of Coca‑Cola.

Add Vanilla & Orange

Stir in 1 teaspoon pure vanilla extract and 1/2 teaspoon orange extract (or 1/2 teaspoon strained orange concentrate or 1/4 teaspoon freshly steeped orange zest infusion). Mix thoroughly so the flavors meld into the syrup.

Spice & Aromatics (optional)

Whisk 1/8 tsp ground cinnamon, 1/16 tsp ground nutmeg and 1/4 tsp kola nut powder or instant espresso into the syrup. If using whole spices or zest, you can steep them in the hot syrup for 5–10 minutes then strain. Taste and adjust: spices should be faintly present, adding depth but not overtly spiced flavor.

Finishing & Serving

Cool the finished syrup to room temperature, then chill in the refrigerator until cold (about 30–60 minutes).

To serve: fill a tall glass with 1/2 cup ice. Measure 1/4 cup (60 ml) of the chilled cola syrup into the glass. Pour 1 cup (240 ml) chilled sparkling water over the syrup and gently stir to combine. Taste and adjust: for stronger cola flavor, increase syrup to 1/3 cup; for lighter, use 3/16–1/4 cup.

Garnish with a lime wedge. Serve immediately cold. Store any leftover cola syrup in a sealed container in the refrigerator up to 2 weeks; dilute with chilled sparkling water at the same ratio when serving.
