Smoothie Base

Method

Prep

  1. 1

Peel the banana and break it into chunks. If you’re using fresh mango or pineapple, peel and chop and then briefly freeze until firm (at least 1–2 hours) — frozen fruit gives the smoothie a thick, cold texture.

  2. 2

Peel and finely grate the fresh ginger. Squeeze the lime to yield about 1 tablespoon of juice.

Blend Smoothie

  1. 3

    Combine ingredients

Into a high-speed blender add the frozen mango (2 cups), frozen pineapple (1 cup), banana chunks (1), coconut water (1 cup), and almond milk (1 cup).

  2. 4

    Add flavorings

Add the grated ginger (1 tsp), fresh lime juice (1 tbs), and a pinch of sea salt to the blender. If you prefer a sweeter smoothie, add maple syrup or agave (1 tbs) now.

  3. 5

    Optional ice

If you want a colder, thinner drink, add 3–4 ice cubes (optional).

  4. 6

    Blend

Secure the lid and blend on high for 45–90 seconds, or until the mixture is completely smooth and creamy. Stop and scrape the sides once if needed to incorporate any fruit that clings to the blender.

  5. 7

Check consistency and taste. If too thick, add up to 1/4 cup more coconut water or plant milk and blend briefly. Adjust sweetness with additional maple/agave if necessary, and adjust lime for brightness.

Serve & Garnish

  1. 8

Pour the smoothie into two chilled glasses, dividing evenly.

  2. 9

Sprinkle 1 teaspoon of shredded coconut on top of each glass (reserve remaining teaspoon for the second glass or sprinkle both) and garnish with 2 fresh mint leaves each.

  3. 10

Serve with a lime wedge on the rim and enjoy immediately for best texture and flavor.
