Tea Base

Milk & Creaming

Method

Tea Base

  1. 1

    Boil water and steep

Bring 500 ml water to a rolling boil in a kettle or saucepan. Remove from heat and add 2 tsp of black tea leaves (or 2 strong black tea bags). Let steep for 4–5 minutes for a strong brew. If you prefer less astringency, steep 3 minutes.

  2. 2

After steeping, strain the loose leaves or remove and discard the tea bags. Reserve the hot tea.

Milk & Creaming

  1. 3

While the tea steeps, warm 250 ml whole milk and 50 ml heavy cream in a small saucepan over low heat just until steaming — do not boil. Warming the milk helps integrate it smoothly with the hot tea. Alternatively, use only milk if you prefer a lighter drink.

  2. 4

If you want a frothy top, whisk the warmed milk/cream vigorously for 20–30 seconds or use a milk frother briefly.

Sweetener & Flavor

  1. 5

Stir 2 tablespoons sugar into the hot brewed tea until fully dissolved. Add 1/2 teaspoon vanilla extract if using and stir to combine. Taste and adjust sweetness to preference.

Finish & Garnish

  1. 6

Fill a tall glass with about 1 cup of ice cubes. Pour the sweetened hot tea over the ice to cool it quickly (this also creates a light dilution).

  2. 7

Pour the warmed milk/cream over the iced tea, allowing it to swirl and create a layered appearance. Stir gently to combine, or leave layered for presentation.

  3. 8

Garnish with a lemon slice or mint sprig if desired. Serve immediately with a straw or spoon.
