Ginger Syrup (makes ~8 oz)
Thai Chili-Infused Simple Syrup (makes ~4 oz)
Method
Ginger Syrup

Combine 1 cup sugar, 1 cup water and sliced fresh ginger in a small saucepan over medium heat.

Bring to a gentle simmer, stirring until sugar fully dissolves. Reduce heat and simmer for 10 minutes to extract ginger flavor.

Remove from heat and let steep 20 minutes for stronger flavor. Strain through a fine mesh sieve and cool. Refrigerate up to 2 weeks.
Thai Chili-Infused Simple Syrup

Combine 1/2 cup sugar and 1/2 cup water in a small saucepan and add the halved bird's eye chilies.

Bring to a simmer over medium heat, stirring until sugar dissolves. Simmer 5 minutes, then remove from heat and let steep 30 minutes (longer for more heat).

Strain out chilies and cool. Store refrigerated up to 2 weeks. Use 1/4 oz in the cocktail; reserve remainder for other drinks.
Cocktail Assembly

Muddle
In a cocktail shaker, add the fresh Thai basil leaves and 0.75 oz fresh lime juice. Gently muddle 6 basil leaves with the lime juice to release aromatic oils. Do not over-muddle (avoid pulverizing leaves).

Build
Add 2 oz dark rum, 0.75 oz ginger syrup, 0.25 oz Thai chili-infused simple syrup and 2 drops of fish sauce to the shaker.

Shake
Fill the shaker with ice and shake vigorously for about 12 seconds until the outside of the shaker is cold and slightly frosted.

Prepare Glass
Fill a highball or Collins glass with crushed ice (about 1 cup).

Strain & Top
Double-strain the shaken mixture over the crushed ice to catch basil bits. Top with 3 oz chilled ginger beer, giving a gentle stir (1–2 turns) to integrate.
