Coffee Base

Method

Prepare Coffee Base

  1. 1

    Brew and cool

Brew 1 cup of strong coffee and pull 1 shot of espresso (or make 1 concentrated shot of coffee). Let both cool to room temperature (or chill in the fridge for 10–15 minutes). Using cooled coffee prevents ice melt and dilution when blending.

  2. 2

    Dissolve cocoa

In a small bowl, whisk the 2 tablespoons unsweetened cocoa powder with 1–2 tablespoons of the cooled brewed coffee until smooth and lump-free. This 'cocoa slurry' ensures even chocolate flavor in the blended drink.

Mix Cream & Sweeteners

  1. 3

    Combine liquids

In a measuring cup or bowl, combine 1 cup whole milk, 1 cup heavy cream, 3 teaspoons granulated sugar, 1 tablespoon simple syrup (or honey), and 1 teaspoon vanilla extract. Whisk until the sugar is mostly dissolved. Taste and adjust sweetness: add up to 1 additional teaspoon sugar or more syrup if you prefer sweeter.

  2. 4

Stir the cocoa slurry into the milk/cream mixture, then add the cooled brewed coffee and the espresso shot. Mix until uniform. At this point you have the mocha base.

Blend to Frost

  1. 5

    Prepare blender

Drizzle 1 tablespoon chocolate syrup on the inside of each serving glass for garnish (optional). Add 2 cups ice to a high-speed blender.

  2. 6

Pour the mocha base over the ice, then add the remaining 1 tablespoon chocolate syrup to the blender for richer chocolate flavor.

  3. 7

    Blend

Secure the lid and blend on high for 30–50 seconds, or until the mixture is slushy and smooth. Stop and scrape down the sides once if needed. The goal is a thick, frost-like consistency — add a few more ice cubes and pulse if it’s too thin, or a splash more milk if too thick.

Serve & Garnish

  1. 8

Pour the blended mocha frost into the prepared glasses. Top each serving with a generous dollop of whipped cream (about 1/2 cup per serving if using).

  2. 9

Drizzle extra chocolate syrup over the whipped cream and dust with cinnamon or a pinch of instant espresso powder and sprinkle dark chocolate shavings or cocoa nibs if desired.

  3. 10

Serve immediately with a straw and spoon for the frosty texture.
