Prepare Fruit & Base

Blend pineapple base
Place the fresh pineapple chunks, fresh lime juice, orange juice, ginger juice, and agave syrup into a blender. Blend on high for 20–30 seconds until very smooth. Taste and adjust sweetness with another 1/4 tbs agave if needed.

Strain (optional for smoothness)
If you prefer a silky texture without pulp, pour the blended mixture through a fine-mesh strainer into a measuring cup or pitcher, pressing with the back of a spoon to extract as much liquid as possible. Discard solids.
Assemble Drink

Fill a highball or Collins glass about two-thirds full with crushed ice (roughly 1 cup).

Add pineapple base
Pour the strained or unstrained pineapple blend over the ice, leaving about 1–1.5 oz of space at the top for soda.

Top with soda
Carefully top the drink with 3 oz of cold club soda (or sparkling water). Pour slowly to preserve carbonation and achieve a light effervescence. Gently stir once with a bar spoon to integrate.

Thread the pineapple wedge and lime wheel on the rim or place them on the ice. Slap the mint sprig between your palms briefly to release aroma and tuck it into the top of the drink.
