Tea base

Method

Brew and sweeten tea

  1. 1

    Brew

Bring 4 cups of water to a near boil (just off boil). Remove from heat, add 4 tea bags, and steep 4–6 minutes for a strong concentrate. Longer steep (6 min) yields bolder flavor. If using loose tea, use about 3 tablespoons.

  2. 2

    Remove tea bags and sweeten

Remove the tea bags (or strain loose tea). While the tea is still warm, add 1 cup granulated sugar and stir until fully dissolved. If you prefer less sugar, start with 1/2 cup and adjust later with simple syrup. Stir in the optional orange zest and 3 tablespoons fresh lemon juice. Taste and adjust acidity or sweetness while warm.

  3. 3

    Chill

Transfer the sweetened tea to a container, cover, and chill in the refrigerator until completely cold, at least 2 hours. Reserve 2 cups of the chilled brewed tea (for blending) and keep the remainder chilled for serving or additional batches.

Blend frozen tea

  1. 4

    Prepare blender

Place 6 cups of ice into a high-speed blender. Pour in the 2 cups of reserved chilled brewed tea. Add 2 tablespoons simple syrup if you want extra sweetness or smoother texture (optional).

  2. 5

    Pulse and blend

Pulse the blender 4–6 times to break the ice, then blend on high for 20–30 seconds until you reach a smooth, slushy consistency. If mixture is too thin, add a cup more ice and blend briefly. If too thick, add 1–2 tablespoons of cold brewed tea and pulse again.

  3. 6

    Taste and adjust

Taste the frozen tea and adjust sweetness or acidity: add more simple syrup for sweetness or a squeeze of lemon juice for brightness, blending briefly to combine.

  4. 7

    Serve

Pour the frozen tea into chilled glasses. Garnish each glass with a lemon slice and a mint sprig. Serve immediately with a wide straw or spoon.
