Cinnamon Syrup

Make cinnamon syrup
Combine 1 cup water, 1 cup granulated sugar, 2 tbs packed light brown sugar, 1 tsp ground cinnamon and 1 whole cinnamon stick in a small saucepan over medium heat.

Stir the mixture until the sugars fully dissolve and bring it to a gentle simmer. Once simmering, reduce heat to low and let simmer uncovered for 6–8 minutes to infuse the cinnamon flavor and slightly thicken the syrup.

Remove from heat. Stir in 1 tsp vanilla extract and 1 tsp unsalted butter (if using) until combined. Let the syrup cool for 10–15 minutes, then remove and discard the cinnamon stick. Transfer syrup to a jar or bottle; this yields about 1 cup of syrup (enough for several drinks).
Espresso / Coffee

Brew the espresso or strong coffee
Pull two shots of espresso (approx. 2 shots) or brew about 120 ml very strong coffee if you don't have an espresso machine. Use freshly ground coffee for best flavor.

If using brewed coffee, keep it very hot so it blends smoothly with the milk and syrup.

Heat and froth the milk
Pour 10 oz milk into a small saucepan and warm over medium-low heat until it reaches about 60–65°C (140–150°F). Do not boil. Alternatively, steam milk with an espresso machine wand to the same temperature.

Froth the milk to create microfoam: use a steam wand, handheld milk frother, or French press. Aim for a silky, velvety texture with small, even bubbles suitable for latte art or a smooth top layer.

Reserve a tablespoon or two of foam for topping if you plan to add whipped cream as well.
Assemble the Latte

Pour the 2 shots of hot espresso (or 120 ml strong coffee) over the syrup and stir thoroughly to dissolve and incorporate the syrup into the coffee base.

Slowly pour the steamed milk into the cup while holding back the foam with a spoon. Once the cup is nearly full, spoon or pour the reserved foam on top.

If desired, add 1–2 tbsp whipped cream on top of the foam for an indulgent finish.

Lightly dust the top with 1/4 tsp ground cinnamon and a pinch of ground nutmeg. Optionally sprinkle 1/2 tsp brown sugar or cinnamon sugar over the top for a caramelized touch.
