Boil water and add pearls
Bring 6 cups of water to a rolling boil in a medium saucepan. Once boiling, add 1/2 cup uncooked tapioca pearls and stir gently to prevent sticking.

Cook pearls
Return to a boil, then reduce heat to maintain a vigorous simmer. Cook according to package timing for fresh-cooking pearls (generally 8–12 minutes). Stir occasionally so the pearls don't clump. Pearls should be translucent with a slightly chewy center.

Simmer and rest
After the initial cooking, turn off heat, cover the pot, and let the pearls sit in the hot water for an additional 8–12 minutes (longer for chewier pearls). Timing depends on brand — adjust toward longer if still starchy inside.

Rinse and drain
Drain pearls into a colander and rinse under cold running water for about 30 seconds to stop cooking and remove surface starch. Shake to remove excess water.

Sweeten and rest in syrup
Place the drained pearls into a bowl. Add the 1/2 cup brown sugar and 2 tablespoons dark brown sugar over the warm pearls. If the sugar doesn't fully dissolve, add up to 2 tablespoons hot water and stir until glossy. Cover and let sit for at least 10 minutes so the pearls absorb the syrup and remain soft.

Combine sugars and water
In a small saucepan, combine 3/4 cup dark brown sugar, 1/4 cup light brown sugar, and 1/4 cup water over medium heat.

Dissolve and simmer
Stir until the sugar dissolves and bring to a gentle simmer. Reduce heat to medium-low and simmer 4–6 minutes, stirring occasionally, until syrup thickens slightly and develops a deep, glossy brown color. Do not overcook to avoid bitterness.

Finish syrup
Remove from heat. Stir in 1/2 tsp vanilla extract if using. Let the syrup cool slightly; it will thicken as it cools. Reserve a few tablespoons to coat the inner walls of serving glasses for the signature 'brown sugar streaks.'

Brew strong tea
Steep 2 black tea bags in 1 cup of freshly boiled water for 4–6 minutes to make a strong concentrate. Remove the tea bags and let the tea cool to warm (or chill briefly if you prefer cold tea faster).

Combine milk and tea
In a measuring cup or small pitcher, combine the brewed tea, 1 cup whole milk, and 2 tablespoons half-and-half (if using). Stir in about 2 tablespoons of the reserved brown sugar syrup (adjust to taste). Taste and add more syrup if you prefer sweeter milk tea.

Assemble the drink
Spoon 3–4 tablespoons of the syrup-soaked pearls into the bottom of a tall serving glass. Drizzle additional brown sugar syrup around the inside walls of the glass to create streaks (about 1–2 tablespoons). Add 4–6 ice cubes, then pour the milk tea mixture over the ice, leaving a little headroom. If you like the milky layer on top, pour slowly.
