Preparation and Cooking

    Prepare the Marinara

    If you're making house-made marinara, prepare it ahead of time. Simmer crushed tomatoes, garlic, onion, basil, and oregano in a saucepan until thickened. Set aside.

    Prepare the Calamari

    In a large bowl, mix together the flour, cornstarch, salt, black pepper, and garlic powder. Dredge the calamari rings in the mixture until fully coated.

    Fry the Calamari

    In a deep fryer or large pot, heat the oil to 375°F (190°C). Fry the coated calamari and banana peppers in batches for about 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.

    Assemble the Dish

    On a serving platter, arrange the fried calamari and banana peppers. Top with pepperoncini, kalamata olives, feta cheese, and lemon slices.

    Serve immediately with the house-made marinara on the side for dipping.
