    Prepare the Pulled Pork

    Season the pork shoulder with salt and black pepper. Smoke the pork shoulder in a smoker at 225°F for about 8-10 hours, until it reaches an internal temperature of 195°F. Once cooked, let it rest for 30 minutes, then shred the pork using two forks.

    Make the Coleslaw

    In a large bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well and refrigerate for at least 30 minutes to allow flavors to meld.

    Assemble the Sandwich

    On the bottom half of each knot roll, place a generous portion of smoked pulled pork. Drizzle with Hose 22 BBQ sauce, top with shredded cheddar cheese, a scoop of coleslaw, and a few slices of bread and butter pickles. Place the top half of the roll on and repeat for remaining sandwiches.

    Serve the sandwiches immediately while warm, with extra BBQ sauce on the side if desired.
