Prepare the Onions
In a large pot or Dutch oven, melt the butter over medium heat. Add all the onions (yellow, red, sweet, shallots, leeks, and green onions) and cook, stirring frequently, until the onions are caramelized and golden brown, about 30-40 minutes.

Add Garlic and Liquid
Stir in the minced garlic and cook for an additional 2-3 minutes. Then, add the dry white wine, scraping the bottom of the pot to deglaze it. Allow the wine to reduce for about 5 minutes.

Add Broth and Seasoning
Pour in the beef broth, and add the dried thyme, bay leaves, salt, and black pepper. Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes.

Prepare the Baguette
While the soup is simmering, preheat your oven to 400°F (200°C). Place the sliced French baguette on a baking sheet and toast in the oven for about 5-7 minutes until golden brown.

Serve hot, garnished with additional thyme if desired.
