Soak Potatoes
Place the cut potatoes in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which will help achieve a crispier fry.

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature.

Dry Potatoes
After soaking, drain the potatoes and pat them dry with paper towels. Removing excess moisture is crucial for crispiness.

Fry the Potatoes
Carefully add a batch of the dried potato sticks into the hot oil. Fry for about 4-5 minutes or until golden brown. Do not overcrowd the pot; fry in batches if necessary.
