Potatoes

Method

Preparation

  1. 1

    Wash and Peel Potatoes

Thoroughly wash the Russet potatoes under cold water to remove any dirt. Use a vegetable peeler to peel the skin off the potatoes.

  2. 2

    Cut into Fries

Slice the peeled potatoes into even sticks, approximately 1/4 inch thick. Try to keep the sizes uniform for even cooking.

  3. 3

    Soak Potatoes

Place the cut potatoes in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which will help achieve a crispier fry.

Cooking

  1. 4

    Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature.

  2. 5

    Dry Potatoes

After soaking, drain the potatoes and pat them dry with paper towels. Removing excess moisture is crucial for crispiness.

  3. 6

    Fry the Potatoes

Carefully add a batch of the dried potato sticks into the hot oil. Fry for about 4-5 minutes or until golden brown. Do not overcrowd the pot; fry in batches if necessary.

  4. 7

    Drain and Season

Once cooked, remove the fries from the oil with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt, black pepper, garlic powder, and paprika while still hot.
