    Beat eggs

    Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until mixture is homogeneous and slightly frothy, about 30–45 seconds.

    Preheat pan

    Place a nonstick 8–10 inch skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. Heat should be moderate so eggs set gently without browning heavily.

    Cook eggs

    Pour the beaten eggs into the preheated skillet. Allow to sit undisturbed for 10–15 seconds, then, using a silicone spatula, gently pull the cooked edges toward the center while tilting the pan to let uncooked egg run to the edges. Repeat until eggs are mostly set but still slightly moist on top, about 1.5–2 minutes total.

Filling — Vegetables & Cheese

    Prepare avocado mixture

    While eggs are cooking, halve and pit 1/2 ripe avocado. Scoop avocado into a small bowl and mash lightly with a fork. Add 1/2 teaspoon fresh lime juice, 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Stir to combine and set aside.

    Prepare vegetables

    Dice 1/2 Roma tomato (remove seeds if preferred) into small pieces. Finely dice 1/4 bell pepper. Thinly slice 1 scallion (both white and green parts). Roughly chop 1 tablespoon cilantro. Combine tomato, bell pepper, scallions, and cilantro in a small bowl; stir in 1 teaspoon hot sauce. This is the vegetable filling.

    Assemble and finish omelette

    When the eggs are mostly set with a slightly moist surface, sprinkle 1/2 cup shredded Monterey Jack cheese evenly over one half of the omelette. Spoon the vegetable mixture over the cheese, then dollop the mashed avocado on top of the vegetables. Use the spatula to fold the empty half of the omelette over the filled half to create a semicircle. Let cook for another 20–30 seconds to melt the cheese and warm the fillings, then carefully slide the omelette onto a plate.

Optional garnish & serving

    Top the plated omelette with 1 tablespoon microgreens or extra chopped cilantro and a spoonful (1 tablespoon) of sour cream or Greek yogurt, if desired. Optionally squeeze a little extra lime over the top or add another drop of hot sauce. Serve immediately.
