Nori & Garnishes
Method
Prepare Sushi Rice
- 1
Rinse and Cook the Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.5 cups of water in a rice cooker and cook according to the manufacturer's instructions. If cooking on the stovetop, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
- 2
Season the Rice
Once cooked, transfer the rice to a large bowl. In a separate bowl, mix together 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoon of salt until dissolved. Gently fold the vinegar mixture into the rice using a wooden spatula, being careful not to mash the grains. Allow the rice to cool to room temperature.

Roll the Sushi
Place a bamboo sushi mat on a clean surface. Lay down one sheet of nori, shiny side down. Wet your hands to prevent sticking, then take a handful of sushi rice (about 1/3 cup) and spread it evenly over the nori, leaving a 1-inch border at the top. Place strips of salmon, cucumber, and avocado along the bottom edge of the rice.
- 5
Form the Roll
Using the bamboo mat, lift the edge closest to you and start rolling away from you, pressing gently but firmly to create a tight roll. Continue rolling until you reach the border of the nori. Dampen the edge with a little water to seal the roll.
- 6
Slice the Roll
Using a sharp, wet knife, slice the roll into 3 equal pieces. Wipe the knife between cuts to ensure clean slices.

Garnish and Serve
Arrange the sushi pieces on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
