Prepare the Broth

    Combine Ingredients

    In a large pot, combine the chicken broth, soy sauce, mirin, dried shiitake mushrooms, minced garlic, sliced ginger, and chopped green onions.

    Simmer Broth

    Bring the mixture to a gentle boil over medium heat, then reduce to low heat and let it simmer for about 25 minutes to allow the flavors to meld.

    Strain Broth

    After simmering, strain the broth through a fine mesh sieve to remove the solids, returning the liquid to the pot. Keep warm over low heat.

Cook Noodles and Prepare Toppings

    Cook Ramen Noodles

    In a separate pot, bring water to a boil and cook the ramen noodles according to the package instructions, usually about 3-4 minutes. Drain and set aside.

    Prepare Soft-Boiled Eggs

    In a small pot, bring water to a boil, gently add the eggs, and boil for 6-7 minutes. Remove and place in ice water to cool, then peel and slice in half.

    Plate the Ramen

    In serving bowls, place a portion of the cooked ramen noodles. Ladle the hot shoyu broth over the noodles. Top each bowl with sliced chashu pork, menma, soft-boiled eggs, and nori. Garnish with chopped green onions.
